Excellent chocolate chip cookies. It pays to use quality chocolate though, because these are jam-packed with it. The tall, thin format is irritating and requires something heavy to keep it open, but the writing is interesting and the recipes are inventive... definitely more so than the generic-looking cover would make you believe!

Very moist, light & nice chocolate flavor even though it’s just cocoa, sugar & egg whites. Instead of going lighter & fruitier, ate it with creme fraiche. Made it in a 8 by 3 inch cake pan & had ample room. Delicious use for extra egg whites.

  • Black-bottom cupcakes

    • Kinhawaii on July 19, 2021

Very moist. I liked it better the next day after refrigeration. Replaced 1/2 of vanilla with chocolate extract. Used mini chocolate chips- but someone thought the chip was a lump so maybe chopped dark chocolate is better. Good but my personal preference is the richer chocolate of cream cheese brownies. These are lighter in texture & individually portioned though.

  • Caramelized chocolate almond budino

    • Kinhawaii on November 12, 2020

Can’t stop eating it - was even better warm, after overnight refrigeration the caramel was absorbed but it’s still good. Yum! Very easy too.

I prefer making this type of pan cookies as they are far less work. No endless scooping/swapping out pans. Not to mention they are great if you are feeding a crowd, but very bad if you are home alone!
