  • Tomato basil bread

      Page 62. My bread flour was (unbeknownst to me) a year expired so didn't provide the rise I was hoping for. The flavors were excellent though. I baked the loaves in loaf pans and used an Italian herb flavored olive oil which paired well with the tomato and basil. I would make this again with fresher flour.

      Very good! I swapped the cinnamon for cardamon and a 1/4 cup of barley flour for 1/4 of the AP. I also added 2/3 cup walnuts and 1/3 cup cacao nibs. My new favorite banana bread recipe.

      I added two tablespoons of canola oil ( to the two called for) because I only had one cup of plain yogurt. I liked the crunch of the walnuts. These were good freshly baked out of the oven with a dab of butter, but mine were on the dry side.

      I liked the whole wheat flour in this recipe. Overall, they turned out pretty well (some were biscuit shaped, others spread a bit) and were a nice accompaniment to steak chili. My experience making biscuits is using Bisquick, so this was my first attempt at making biscuits from scratch. I need more practice. Dough seemed dry to me but biscuits were moist. I would use a cutter next time for uniform size.
