  • Simple coconut quinoa and lentil curry with lime mango

      This was a really good vegetarian dinner. It didn't take long to pull together and the results were really good. Lentils and quinoa can be bland but there is lots of added flavor from Thai red curry paste, fish sauce, coconut milk, chiles, ginger, curry powder. Red peppers and kale add a lot too. Toppings of mango, almonds, basil, mint and yogurt are not essential (or at least not all of them) but worked well.

      I usually make my own pie crusts but as this was going to be gluten-free (daughter's request for Thanksgiving dessert) so I used a Whole Foods frozen gf crust. It was actually pretty good, especially with HBH's idea of vanilla sugar sprinkled on the crust edges. The filling was great - a bit gooey on first eating but firmed up more for leftovers. The leftovers lasted very well, still going strong days later. I highly recommend the hazelnut whipped cream (I did include Frangelico).

      Very good. I made half a recipe with 2lbs of bone-in skin-on drumsticks and garden onions. Used more mushrooms than asked for and caramelized them with the onions before adding the braising liquid.

      It was very good but quite salty. I checked the sodium content of the jar of commercial salsa verde that I used, it was over 200 mg for 2T, so 2 C of said salsa would have over 3200mg of sodium. Would be much better if I made my own salsa verde.

  • One-pot cheesy turkey tamale pie

      I used a mix of turkey and vegetable stock for the polenta. Had no gravy, so used all enchilada sauce (Emeril's easy enchilada sauce) for the turkey mixture and skipped the cayenne. Used a Mexican blend cheese for the topping. With a quarter cup of chili powder in the enchilada sauce and another couple of tablespoon added in with the turkey, the turkey mixture was somewhat spicy and very flavorful, all that was tamed by the bottom layer of polenta.

      Just made it this morning & it is so tasty! It's going to be hard to keep this around for long. Update: Now that I've had this in my house a few days, it's safe to say that I will make a half-batch next time.       These were just delightful. I made 14 per the recipe, which was a little bit of a pain given that my pans only have 12 donut wells collectively, but I liked the size of them in the end. I cooked them for 10 minutes and could have cooked them a little less. Also next time I'd put the glaze in something that could be reheated (rather than the metal bowl I used), as the glaze had seized up by the time the last two donuts came out. Wish I'd seen anya'_sf's note about maple extract, will have to try that next time! Because there will be a next time...

      White whole wheat flour worked fine; the whole wheat went well with the maple. I used buttermilk instead of milk, since I needed to use it up, plus there's a large amount of baking soda. Half recipe yielded 6 doughnuts (note: if making the full recipe, you need 2 pans or bake in batches). I added a drop of maple extract to the glaze so the maple flavor really stood out. We liked these a lot.

      I used Vedrenne Blackberry liqueur and cut the amount to 1/4 oz. I made up for it by increasing the Bourbon to 2 oz. I also used 1/4 cup plus of fresh pomegranate seeds and muddled them with the maple syrup. I would definitely be interested in trying it with the Chambord.

      Absolutely delicious but a bit of a schelp to make! I've not made ravioli before, so thought I would try the fresh lasagne sheet method. I could tell from the outset it would not work - they are too thick, and even when soften with hot water they are not pliable enough. So, I had de-constructed ravioli and it was still incredible. I split the milk by pouring it straight into the tomatoes - will I never learn? Split or not what an incredible tomato sauce! Yum! I'll be making this one again but lobster is a bit over the top so perhaps with shrimps or scallops.

      Despite omitting the cheese (served it with optional parmesan), this was very rich (too rich for us) thanks to the oil for the roasted tomatoes and the oil in the pesto. I used a 186ml jar pesto as part of the liquid; an additional 1 cup of water was required, added during the latter stages of baking. I liked it better second day but I won't make this again.

      I adapted this recipe to what I had: I tossed leftover roast chicken breast meat with pesto, substituted crisped prosciutto for bacon, omitted the avocado, used the mayo based dressing as a spread (1/4 recipe) and made with Italian buns. Delicious!.

      This recipe chose me, as I had leftover sautéed zucchini and corn on the cob in danger of being forgotten. Because my squash was already cooked, I didn't follow the method. Based on a comment on her blog, I seared the corn off the cob in a dry pan. Then I really went off road. Sometimes I feel like HBH recipes have one flavor too many. Well, I added a few extra this time. I added some sun dried tomatoes in oil, left after making another of her pasta recipes. Then I tossed in some pancetta I found in the freezer, and the pesto. I used cavatelli, tiny tiny shells as I didn't have orzo. I would do so again, it holds the sauce better. For cheese I went with feta and gruyere. The feta added a creamy tang. This received the highest praise from my SO- “you could serve this to guests”. We dug in before I got a photo of the intact dish, hence a close up of the left half.

      I used 3 zucchini, 2 tsp dried thyme instead of fresh, slightly less corn. I was skeptical that baking orzo this way would work, but it did, although after 15 min of baking, there wasn't much unabsorbed water and the orzo was still crunchy, so I stirred in another 1/2 cup. I did use warm water, not cold. 4 oz pesto seemed like enough; I used HBH's lemon basil pesto and think the lemon helped perk this up. Also tasted for salt before topping with cheese and needed to add more. This went really well with grilled sausages and my family loved it.

      Someone just gave me a few zucchini and then I saw this recipe pop up in the notes for this site so I added it to the menu tonight. I really like Half Baked Harvest recipes in general and this was no exception. I did halve the recipe as a 9x13 pan of this would be a lot because we were already having chicken and wedge salad. Would make again.

      This recipe was a hit and will be a repeat. I am not a bread baker; my last effort became a doorstop. I am now firmly team pretzel bread. This dough is so easy to work with, I guess b/c of the melted butter. Caveats about the recipe- the stated prep/cook time does not include the 1-1.5 h for the dough to rise, with all the filling it needed to bake for almost twice as long as stated before the inner dough was cooked. I tested with a thermometer to make sure. I would have liked more photos of the assembly, and guidance on the size of the dough once rolled out. My dough rose while I was cutting and assembling and the pieces were squished more tightly in the pan. The inner portion did not pull apart like the top and sides. That said, I will definitely make this again for a special occasion. It was a 4 hour project. Next time I will remember to take a photo.

      This has become a fast favorite for holidays. The only time needed is advance planning to thaw the puff pastry. I skipped the cinnamon as I wanted them more savory. It helped to freeze the roll briefly before slicing. The brie cranberry is a favorite combo.

      This was a winner! I’m already planning to make it again. I made some changes- I subbed EVOO as suggested. I don’t like sesame oil and didn’t want it to overpower the other flavors. I doubled the pineapple juice and subbed gochujang for the red pepper flakes, which I didn’t think would blend into the sauce. I doubled the marinade and split it, serving the rest over roasted eggplant and the rice. I mixed the avocado into the salsa and used cilantro throughout, skipping the thyme. I think this will go into my ‘serve to guests’ repertoire.

      This was so delicious, I wanted to immerse myself in it. I used prepared pesto and TJ’s everything but the bagel spice so this came together in minutes. I did drain the tomato slices while the pastry/pesto/cheddar layer was baking, and I skipped the olive oil drizzle- there was plenty in the pesto. Another winner from HBH!

      I used ground pork which was very mild & didn’t add a lot of flavor. I subbed what veggies I had available- mushrooms, a bit of endive, purple cabbage, scallions and carrots. I cooked the filling first as I don’t have faith that raw filling would steam fully. I also got lazy with the dipping sauce as it was now 90 minutes later- rice wine vinegar and sweet soy. Put most of the filling aside to dumpling another day.

      I bookmarked these for Thanksgiving months in advance. I made one change- scattering with torn prosciutto instead of cinnamon sugar. Sugar would take them into dessert territory and away from savory apps. It is important to roll up tightly, and popping the roll in the freezer for a few minutes helped tremendously with slicing. AHA moment. I can make these and freeze slices ready to pop in oven all holiday season. So much easier than my old stand-by spinach balls.

      I made this, adhering as close to the recipe as possible. Lamb meatballs, orzo pasta, avocado sauce and herbs. We made the avocado sauce in advance, so of course the top turned brown. Skimmed the top layer and mixed the rest in. Our lamb was not as flavorful as I hoped for. Otherwise, a great recipe.

More fool me - with the amount of cheesy goodness that went into this, how could this go wrong. Very tasty & a great vehicle to incorporating (non-listed ingredient) veg - I'm thinking spinach, kale, zucchini, corn... This was inhaled by husband & toddler alike.

      I made 1/2 of this recipe tonight with 4 boneless chicken thighs and 3 corn cobs. The rest was pretty much just 1/2 of everything ....and it is delicious!!! I did have to add the end of a jar of basil pesto in place of the fresh basil this time. We scraped the pan clean!!

      So good! My family devoured this. I substituted dried herbes de Provence for fresh thyme on the chicken, cooked 3 chicken breasts, omitted the red pepper flakes, and increased the garlic (it was mild spring garlic). Use a big pan; everything just fit in my 12" cast iron skillet. I was generous with the fresh basil and Parmesan at the end. The suggested accompaniments of quinoa and grilled zucchini were perfect.

      This was great and easy. I substituted salmon for chicken, coconut oil for butter, and coconut cream for heavy cream and used plant cheese (staying away from dairy obviously). Really good.

      The shrimp was quick, easy, and tasty. I skipped the red pepper flakes as we didn't want it spicy. Served over a different corn polenta recipe with more liquid plus parmesan cheese. Three people had no trouble eating all the shrimp.

      I tried this recipe (1/2 batch) as I had 1/4 cup sweetened condensed milk to use up. My cookies must have been smaller since I got 14. Echoing many blog comments, my cookies turned out more cakey than chewy, and did not resemble the blog photo. It's possible they were overbaked, although I thought I followed the directions exactly. Flavor was fine, not as tooth-achingly sweet as the original bar cookies (but those are more gooey).

      I made this polenta recipe to go with basil pomodoro shrimp. I tried this one because it called for more liquid, so should be creamier, plus it has cheese. Despite the large amount of liquid, my polenta still got super thick; I had to add an extra cup of water at the end to loosen it. I used instant polenta, possibly not the best brand, which may have been the problem. Nevertheless, the flavor with fresh corn added was great, and went really well with shrimp, although there was a lot more polenta relative to shrimp.

      Using the Instant Pot (the best appliance ever for risotto IMO), there was no need to heat the broth. 5 cups may have been excessive; I'll use 4 next time. Only a bit of extra broth was needed at the end. I doubled the asparagus so we'd have plenty of veg. With the cheeses, lemon, thyme, and garlic, this was quite delicious.

      I used 1 lb cremini mushrooms - not sure if that was 4 cups. Only used 3/4 cup wine as I didn't want the sauce too winey or thin. Tasted prior to adding cream (rather than coconut milk), I thought it was too harsh, but after the cream, it was really yummy. I used tarragon instead of thyme and sage and added it with the parsley. This served 3 for dinner.

      I'd describe these as scone-shaped muffins. I wish I'd added more spices - extra cinnamon or maybe cardamom and/or ginger. They really need a glaze. I used a brown butter caramel glaze rather than the maple glaze in the recipe.

      Had this tonight for dinner as the local Jersey Peaches have been amazing and this really highlighted everything good about them . Would definitely make again. Don't think it needed 6 slices of bacon for the dressing, next time would cut it down to 3 slices. that might be because my bacon was thick cut.

      I omitted the prosciutto for a vegetarian meal. I mashed the roasted butternut squash before combining it with the ricotta cheese and used a pastry bag to fill the shells. Substituted an Italian blend of shredded cheese in place of the fontina or provolone. Topped the dish with parsley instead of fresh basil. The dish was well liked by the family. Even one member who doesn't like butternut squash had seconds.

      This made a very good bread. I did a vegan version, using egg and butter substitutes and non-dairy cream cheese, which came out very well. It's on the sweet side, to be sure, so it worked well as a dessert and as a breakfast cake the next day.

      Just one fabulous summer dish hitting all the right flavor notes. Used Dalmatia fig spread on the chicken, and much more generously than recipe suggests. Also believe recipe meant for crushed garlic cloves to be added at the same time as shallots, which I did. Used Sauvignon Blanc and a barrel-aged balsamic vinegar from local culinary shop for the sauce, which was outstanding with the chicken, the peaches, and the burrata. I roasted the organic chicken breasts for 20 minutes because some were quite large but suggest a shorter cooking time (15 minutes) to keep the meat moist. Served with lemon-garlic orzo and green salad. It's a keeper. Will definitely make again. Rave reviews.

      Made these to serve at Cookbook Group dinner. Easy to put most of the ingredients together a day ahead and then just add ginger beer and blood orange slices before serving. Rave reviews. They go down very easily and are so pretty in the glass. Recipe makes a large batch, so a good drink for a party.

      These are amazing. I liked them so much more than quesadillas. I made everything just as written, although I followed the folding technique on the video. Also, the video mentioned squeezing some orange juice over the chicken, which was not mentioned in the recipe. Next time, I would add a bit of lime with the OJ for a mojo vibe. I can’t wait to make the Buffalo chicken version.

      Absolutely outrageous. And simple. I have a tikka masala recipe which I love but it uses every spice and tool I have in the kitchen. This came together in 40 minutes, but I did marinate the chicken a few hours in advance. I also read several reviews from the blog and omitted the red pepper flakes and just sprinkled a bit of cayenne in both spots called for in the recipe; I think the original 2-4 teaspoons of the combined peppers would have been a bit much for my family. My measurements were also a bit creative with the liquids, basically using the amounts of coconut milk, tomato paste and cream which I had available. Such a keeper!

      These are incredibly good! I browned the boneless short ribs and then poured the sauce over them and cooked in a 200 degree oven for six hours. I served this with the bright crunchy slaw , cheddar cheese, and the yum yum sauce on toasted corn tortillas. Kids were happy too.

      Loved the spice mixture on the scallops, and we drizzled extra over the polenta. There was extra polenta which we saved - the next day it was good, but too heavy to be eaten on its own. It needed something spicy/acidic to cut through the richness. Pro tip - remove the muscle from the scallop before cooking!
