  • Rhubarb and gingernut baked cheesecake

      This was absolutely fantastic - I love the combination of rhubarb and ginger, often stew them together (Melissa Clark) so when I saw them combined in a cheesecake I couldn't go past it. I hadn't made a cheesecake for years, wasn't even sure if I still liked them, but this reminded me what a good cheesecake should taste like. Only thing I would have done differently is cook a bit more rhubarb to go on the top.

      I made this with some cooked goat meat which I minced adding it as per the recipe but I did not cook it for long before putting into a baking dish and topping with potatoe and cheese. It was a great recipe to use up left over cooked meat. The flavours were great.a good comfort food dish.

      This was delicious and looked fantastic. I made it for a sunday night light dinner but it would be equally good as part of a shared plate. There were no left overs!

      I made this dish again but with Chorizo. It was as good as the first time I made it. The Ripe books are two of the most used cook books in my library. The recipes are all delicious.

      Trying to be a bit healthy I halved the mayo it was still fab. I make extra to use as a side dish through out the week.

      6.15 Scrummy - I cut back on nuts and mayo - was fine. Could almost of had one other head of broc depending on size.

      Easy and very nice. Make double for freezer. And make extra nuts for snack with a cuppa tea

      12.13 Had to substitute quite a bit. Dressing great - yummy healthy salad. 4.14 Yummy again 1.5 x the dressing. Edamame add great colour.

      4.14 Great way to cook chicken skewers. Flavours ok - could use method w different flavours. Dip yum.
