      These have a nice sour flavor without it being too strong. I liked them but not enough over other recipes to go through the added effort of using a sourdough starter.

      Delicious though a bit time consuming . They are excellent garnishes for just about anything! left overs reheat nicely on a sheet pan preheated in oven

      This is a fantastic recipe which makes beautiful sourdough bagels. I found the bagel shaping directions in America's Test Kitchen "Bread Illustrated" to be very helpful.

      Beware: The full recipe of this dough is very hard on my Kitchenaid Professional 7 quart mixer (with a 5-year warranty). I love this recipe and have made it over 50 times (I keep track!). My first Kitchenaid motor died after kneading 26 batches of the four pounds of dough. My second Kitchenaid mixer (warranty-replacement) died after another 24 batches of dough. I am awaiting delivery of the next warranty-replacement mixer. Going forward, I plan to knead the dough in two parts, half at a time. Either that or make a half recipe... Kitchenaid has been wonderful about honoring their warranty.

      This is one of my favorite recipes for bagels! It makes a tasty filling, bagel that I find more satisfying then the non-levain equivalent.

      This is by far one of the most tasty toasting breads I have ever made. Best of all it is absolutely loaded with walnuts!

      These were amazing. The topping was delicious and the bagels had a great chew. Worth the effort, for sure.

      These might be worth baking for the brioche aroma from the oven alone. But, who am I kidding? They were easily the most delicious things to sandwich a burger I've encountered.

      ...the flavor from the rosemary was evident but not too strong. The tender texture of the crumb and the crispness of the crust were due to the olive oil. This made me excited about bread again.
