      Very flavoursome & well received. I just butterflied a whole chicken for 4 people. Otherwise made as is. Not sure what so much ghee is supposed to achieve .. seemed lost & a waste as it just sits in the bottom of the tray under the raised chicken & burns.

      Marinated for 24 hours. Didn't do the couscous as a side, but rather served it with some tzatziki and Meera Sodha's Bread salad with kale, pine nuts and roasted lemon.

      A nice salad combo: served warm with the Spiced coriander chicken, My beets weighed an average of 100g each. They were definitely NOT cooked in the 45 minutes suggested. In the end I resorted to microwave/convection combination - should have done that from the start.

  • Chicken pot roast with mustard cream sauce

      This was pretty good, we all liked the mustard cream sauce. I was cooking at someone else’s kitchen without a probe thermometer, so the chicken was a tad over cooked but still moist. It was a 6 lb bird, so I cooked it covered for 45 min at 400 degrees F and uncovered for another 45. The shallots disintegrated somewhat and did not stay intact as shown in the picture, I also skipped the parsnip.
