      Elizabeth David gave this recipe for baking mushrooms with vine leaves in her beautiful book An Omelette and a Glass of Wine. She says she first saw the recipe in Edmond Ridhardin’s 1913 book L’Art du Bien Manger. It is as good today as it was a century ago. It is a classic recipe and the best (IMHO). It is amazing what the leaves do to the mushrooms. A favourite recipe.

      Elizabeth David has one of the best descriptions of how to cook fava beans, which can be a bit tricky. Sadly, not all books note that they have to be cooked long and slow, without disturbing, for the best results.
