      I made this with Panko instead of breadcrumbs and it turned out fine. The Cucumber sauce that goes with it is perfect

      This works with any fresh stone fruit and a complementary jam. I made it with fresh ripe nectarines (no need to peel) and used raspberry jam in the sauce.

      I use olive oil instead of vegetable oil and the flavor is wonderful! I have made this in 2 loaf pans and as a round loaf on a baking sheet. The dough is very soft,so it spread on the baking sheet resulting in more of a flat loaf. So today I formed a round loaf and baked it in a straight sided souffle dish. Turned out great. Just be sure to slash the top before putting in the oven.
