Notes about Recipes in this book

  • Breakfast quinoa with raisins and honey

    • Astrid5555 on April 06, 2015

Delicious. I do not know why I have not thought of adding chia seeds to porridges before, which adds a completely new kind of creaminess. Substituted dates for raisins, and topped with mixed frozen berries. Will go into regular breakfast rotation.

  • Jewelled couscous salad

    • Astrid5555 on September 09, 2016

This is a simple yet delicious salad, which can be prepared in no time. Made with the optional feta cheese. Perfect!

  • Italian-style stuffed aubergines

    • Ro_ on November 22, 2021

Didn't love these. Somehow they lacked depth and zing. Maybe would have been nicer with some minced beef included, and red wine.

  • Polenta and ricotta berry torte

    • Jane on May 26, 2017

This was a lovely summer dessert. Very easy to make, great flavor and texture. In my oven I needed 65 minutes. It sank slightly in the middle on cooling but it didn't seem to matter.

Publishers Text

Grains have always played an important part in a healthy diet, but not everyone knows how to cook with them. Cookbook author Ghillie James not only discusses 21 different grains – their provenance, nutritional benefit, and how best to cook them – but showcases 120 international recipes that celebrate them. Chapters include Breakfasts, Soups & Starters, Simple Sides & Salads, Substantial Salads, Main Courses, and Desserts & Drinks. Start the day with Breakfast Quinoa with Raisins and Honey, take Maki and California Rolls to work for lunch, bake some Lazy Zucchini & Sundried Tomato Cornbread over the weekend, create a feast of Fragrant Vegetable Biryani for friends, whip up a bulghur wheat Tabbouleh or Fennel Freekeh Pilav for a quick midweek dinner or indulge in a Polenta and Ricotta Berry Torte. Everyone should be eating more of these grains rather than relying on staples like pasta and this book is here to inspire and excite.
