Notes about Recipes in this book

  • Tinga de pollo

    • lilham on October 17, 2018

I used 4 boned chicken thighs, half a tin of tomatoes (instead of fresh), and made a half recipe. It was really nice served simply with tortilla bread and avocado. It will work well with rice too, as the author suggested.

  • Chicken with peanut mole

    • joneshayley on January 23, 2020

      Delicious, and unusual

  • Black bean stew

    • joneshayley on May 03, 2018

Another wonderfully deep and flavourful recipe, richly spiced and filling. The accompaniments are perfect and really make the meal

  • Cucumber, chilli, beetroot and ricotta salad

    • joneshayley on May 08, 2018

Lovely summer salad. Not breathtaking but worth making if you have a few beets get rid of.

  • Roast tomato salsa

    • joneshayley on May 27, 2018

Very good but slightly more watery than I like. It’s worth taking the seeds out of the tomatoes in my opinion

  • Avocado salad

    • lean1 on March 31, 2020

I love this dressing. Only difficulty was getting it out of the blender. May use a cuisinart next time.

  • Corn pancakes with avocado cream and crispy bacon

    • JJ2018 on September 25, 2019

Nice corn cakes but for me there was nothing that made this ‘the one’. Incorporating the chorizo in the batter was a nice change but would be more generous with chipotle next time to get more of a kick from the heat

  • Queso fundido with chorizo

    • etcjm on September 07, 2019

Yum. Chop small. don't be lazy chopping the chorizo because when you are dunking your pitta or tortilla it matters! I really enjoyed this. Think I would cook out longer to ensure the watery of the tomatoes is gone but I was working to when the chicken was cooked. No tequila, not something I would have. Used a tin of chopped tomatoes instead of fresh which I would drain next time. Definitely a do again.

  • Soft-baked feta

    • etcjm on February 14, 2021

I served as part of a tapas spread as I thought it would be lovely with some crusty bread and the prawns I was doing. It was lovely - very aromatic and flavoured from so few ingredients. I had thyme but not marjoram as the garden is under snow at the moment - and it's impossible to buy. In hindsight I should have halved the recipe but I'm sure it will be just as good in some sandwiches over the next couple of days. Will definitely be served again - would be great with salad in the summer, sat in the garden.....Oh to dream.

  • Wickedly dark chocolate mousse

    • Pimlicocook on December 05, 2021

Espresso and tequila gave this a lovely, almost smokey flavour.

  • Summery spinach and feta tacos

    • Pimlicocook on June 06, 2023

Lots of veg and really tasty. I ate this from a bowl (rather than in tacos), with feta cheese and coriander.

  • Fresh tomato salsa

    • anniecc on September 29, 2023

Good recipe, but I wish the author would give a weight for the tomatoes rather than a quantity. I used homegrown tomatoes and had no idea how the size compared to the ones the author was using. The amount of salt seemed excessive so I halved it, and it was plenty salty.

  • Black bean soup

    • Gallus on June 02, 2023

      600g black beans
