      I made a very small batch (ie 4 tomatoes) for my first try & it is really good! Many of the other recipes I looked at had comments re: the sweetness of the resulting jam - this has a lovely balanced flavour from the fresh herbs & balsamic. When the tomatoes 1st came out the oven, it did not seem like the skins would slip off and I considered a run through the foodmill....but after cooling for several minutes, they came off easily. Also, next time I would leave the garlic cloves whole in their skins to roast - my slices came out rock hard & had to be discarded. I wanted to use plum tomatoes & I got a balanced jam that will be great with cheese, on burgers/sandwiches or beside eggs. Full recipe for sure next time!

      Really nice, velvety carrot soup. I used some good quality sweet carrots that gave the soup a vibrant orange color. I would make this again.

      This was a delicious, slightly spicy side dish. The spices went well together and I liked the added lime juice at the end. I would make this again.
