    I dusted off my copy and tried the Lemon- Basil chicken salad for lunch. It was a good, satisfying salad with the following changes: I increased the avocado amount, added olive oil to the lemon juice, and switched out the arugula leaves and substituted fresh green beans. When I have all the ingredients on hand, I’ll definitely make it again.
