      I used cashew milk and got a nice consistency. The balsamic vinegar added a nice punch.

      Ohhhh. I am looking in Mark Bittman's "VB6." I did not realize there was a separate "The VB6 Cookbook." I will have to look for that one.

  • Caponata mixed rice

      This is essentially a risotto, fine for a lazy weekend morning but not quick. Veg can be chopped while rice starts cooking. 1 aubergine and 1 punnet cherry tomatoes made half recipe (2 portions). Filling but not as tasty as I'd hoped, next time taste before adding balsamic vinegar, it seemed to overpower it along with brown rice? Portion sizes generous. Might try different version next time.

      I should have known from the ingredient list that this recipe, although very healthy, produces a dry burrito. We put guacamole in it and salsa over it, but it was still pretty dry. It’s a good vegan option but Probably won’t repeat.

      Ingredients list here contains vegannaise recipe too, I just used shop bought. The mushroom bacon was a success, although I may have left it in slightly too long - keep a closer eye towards the end. 3 Portobello mushrooms made half the amount (2 sandwiches). Meat eating husband thought it tasted like the real thing (and he hates mushrooms). Daughter said it tasted like pepperoni, although the paprika was too hot for her. Sandwich made a nice change, this is a keeper.

  • Miso-mushroom burgers

      This has great umami flavor, but it is hard to keep the burgers in one piece. That makes serving them over a simple salad the best option.

      A good, hearty dish with an Interesting mix of ingredients. I borrowed the cookbook from the library to try out some of the recipes. Not that many appealed to me a whole lot, but this one looked interesting. I’m not sure I’d buy the book based on this recipe. It was a solidly good supper meal, but not one I liked enough to repeat on a regular basis.

      My husband really liked this; I thought it was good rather than great. The abundant vegetable base of mushrooms and leeks makes the steak a healthier version of the typical beef dinner. Everything came together in about 30 minutes.

  • Vegetable curry with lamb

      Just tried this recipe and sorry to say it falls flat. We are Bittman fans but this doesn’t have much flavor and veg are way too mushy and lamb too tough. Too much liquid called for in recipe so comes out too thin even with extra cooking out of liquid as recipe suggests.

      Even my boyfriend, who is adamantly opposed to vegan meat substitutes, really enjoyed these tacos. ...you'll have the best results crisping the tofu in a nonstick skillet.

      I thought the final meatballs were a bit too mushy, and could have used structure from nuts or other grains. I wouldn't recommend serving them in a sandwich, as pictured.
