      This was delicious and could be easily made as a lasagne. In fact, this is going to be my go-to lasagne recipe from now on.

      Added a bottom layer of cooked penne pasta to the dish. Otherwise, it would need something else with it (unless you’re on a diet). I used feta instead of goats cheese and cheddar instead of Parmesan. Had no basil so used dried oregano, parsley and small amount of sage. Grilling the veg in batches first was a bit fiddly so it took a while to prepare but was very nice. Would make again, ideally prepared ahead.
