  • Hearty Italian veg and white bean soup

      This recipe calls for 2 Tbsp of liquid aminos/soy sauce and 2 1/2tsps salt which I thought was a little excessive so I cut down the salt to I level teaspoon. For my palate that was plenty so I am glad I made this decision. The soup was flavoursome and even better the following day.

      I would have never thought of adding leeks to a chilli but this works so well, a really tasty and very low calorie chilli if you are careful with the oil.

      This soup is beautiful but it helps to be in the mood for some veg chopping! End result is very thick but you can thin it down with stock or water. Gorgeous Thai flavours, rich and filling.

      Very good! I didn't have almond butter, but I had cashews at home that I used to make my own cashew butter (roast cashews until they start turning golden, about 10 minutes, and then put them in the food processor while still warm). It worked perfectly in the cake. The cake freezes really well. Took out a few pieces the other day, and they tasted exactly the same as the day I made it.
