      Very nice alternative to white bread. Soft, high rising bread; nice flavour from the molasses and a bit of texture from the cornmeal. I used an entire package of quick rise yeast (approx 2 tsp)

  • Basic whole wheat bread

      Added 1 Tablespoon powdered instant dry milk, replaced 1/4 cup of the whole wheat flour with 1/4 cup wheat germ. I used an entire packet of instant yeast. I also used the dough cycle on my machine and shaped it into a loaf and let it rise and bake it in the oven because I’m a control freak and I think I get better results that way than baking in my bread machine. This was an amazingly flavorful loaf with an awesome texture. Light and fluffy. I’ll definitely be making this one again. Might be my next favorite whole wheat bread.

      Lovely, but does sink very easily. Would make it again though. Worked well with fresh milled hard red.

      The apricots I used ended up underhydrated and far too tart. Use soft, sweet ones, or rehydrate them with sugar before adding (reducing the buttermilk to compensate).

      Maybe the Yeast was bad or the oven for the second rise although off, was too hot, either way, this was just one big cracker.
