  • Upside-down pear cake

      I did this with Armagnac (did not have Whisky or Bourbon), and substituting maple syrup for molasses. I also used salted butter as I prefer my caramel on the salty side. That was quite nice and spicy, although the cake did look much lighter than in the picture (in terms of color). My guests really liked it (the guy was really happy to the point I felt a bit embarassed towards his wife who also liked it ... but well... lol :) I served it warm at breakfast after 10 minutes on grill mode oven. I served this at work as well and everybody was complimental... It was really tasty and the Armagnac came out nicely.

  • Strawberry chiffon Pie

      This was a mess to cook with my limited machinery. I realised I had lost my blender blades, and then just used my standing electric whisk for everything (egg whites, cream, and breaking the gelatin in the strawberry sauce). This was not a good idea -> mixing gelatin should have been with the blender, or by hand. I couldn't get the eggs to peak with the sugar added in, so I mixed the sugar in the cream and in the strawberry mixture instead, given all three were being mixed together the step after, and I reckon this worked, Overall though despite all this messy business, results! The pie did come through as planned, with a great consistency, the strawberry mousse held fine too. I used 450g strawberries, and 50g raspberries, which after thawing yielded exactly 200ml of juice (well done M. Malouf for accurate measurements ;)

  • Chocolate carrot brownies

      I liked it, but didn't love it. That being said, comments at work were really complimentary "best chocolate cake I ever had" "extraordinary"...etc. so maybe just me :) I also thought it was a lot of faff/washing up : four bowls which had to be worked on separately then mixed, one for the eggs, one for the dry mixture, one for the chocolate/butter, one for the carrots. I omitted the raisins also, because I do not like them, and replaced vanilla extract with actual vanilla (I did not have any left).
