    I made the “Caribbean Chicken” and it was a three star— okay — dish. The simmering time of 40 minutes seemed too long, so I cut it down to 35 minutes. My breasts were still a bit dry even though they were simmering in lots of liquid. The fresh pineapple and oranges add a nice amount of flavor, and the sprinkled-on cayenne pepper and paprika definitely add some pop, but we like the Caribbean salsa from our Colorado Collage cookbook better. Probably won’t make again.

    I made the “Simple Baked Salmon” using coho wild and it was delicious. I especially liked how juicy it was after marinating in lime juice, olive oil and honey. Super easy to prep and then bake In the oven for 15 minutes. Voila! Done. This is a keeper!
