      Despite having been a Niçoise salad sceptic in the past I gave this one a try as soon as the book arrived and it did not disappoint at all. I loved everything about this salad, especially the dressing which made this salad something special. I am a convert!

      A nice variation on the classic watermelon and feta combo with a grown-up taste. The kids did not like it, but we quite enjoyed this salad. The pumpkin seeds provide a nice crunch and the marinated red onions are much more to my liking than the usual raw onions in other recipes. A keeper!

      A really enjoyable Summer salad. I used pine nuts instead of pumpkin seeds which worked really well. The marinated onions add lovely flavour. Will definitely make again.

      Very nice salad with a crunch from the pistachio nuts and sweetness from the dried apricots. Recipe says for 2 as a main course, but enough for 4 as part of several mezze dishes.

      This is the most delicious salad I have had in quite some time. I skipped making the Parmesan crisps to top the salad with but rather shaved some Parmesan on top, which was also nice. The grated eggs with the crisp, salty Prosciutto in combination with the wilted Little gem lettuce is such a great flavor and texture combination. Wow!

      This was great - hubby isn't a huge fan of broad beans, so used some blanched asparagus instead. Also preferred the texture of blanched sugar snap peas, so made a slight variation to the recipe. Even better the following day.

      This was ok, but not outstanding. The marinated red onions added some tang, but it just needed something 'more' from a flavour profile.

      Was an OK salad - I added a little more olive oil and a squeeze of lemon. Needs a lot of seasoning. Think I’d leave the almonds out next time as gave a funny taste and over-powered it.

      This was a big hit. It’s a really substantial salad - I used pancetta instead of bacon and added more avocado. The dressing is delicious.

      Absolutely scrummy. Made it with some grains to bulk it out and had it on a large bed of greens. Probably could have used slightly less water in the feta dressing.

      Really delicious- doubled it and added a fried egg and some grains for a main course dinner for 2. My SO found it a bit too sweet-- next time may add a squeeze of lemon .
