Notes about Recipes in this book

  • Chicken with stuffing & garlic gravy from La Tupina

    • JFM on January 01, 2017

Made this yesterday for New Year's eve Dinner; absolutely delicious.

  • Salt cod fritters

    • FJT on March 16, 2018

As I’m currently in Brazil and bacalhau is readily available I thought I’d give these fritters a go. Next time I will omit the egg as I think it made the mixture too wet. I had problems with the fritters falling apart while frying.

  • Involtini di pesce spada

    • KarinaFrancis on August 26, 2018

Easy and very tasty. We couldn’t find any swordfish so used a different fish which didn’t improve the dish, I’d like to try it with the right fish. Would do again. Update: I had some of the filling left over so I spread it on fish fillet and baked it in the oven with the top element on for maximum browning and it was delicious!

  • Baked pasta with a beef, pork & tomato ragù (Anelletti alla Palermitana)

    • KarinaFrancis on February 02, 2019

Of course this was delicious - pasta, meat sauce and pecorino has to be good. I’m just not convinced the effort to reward ratio is better that a nice, old fashioned bowl of spaghetti bolognaise. We followed the recipe (mainly) but added peas and cheese in the middle after watching the series on TV. Probably won’t make again.

    • Popisdead on June 21, 2020

Rally good. Did make a bit of a mess getting out the dish, but here ho. Plenty leftover for lunch (really will serve 6 with some sides). Will pre-cook pasta for less time, if at all, when i do it again.

  • Wiener schnitzel with Viennese potato salad

    • Kathyn61 on July 14, 2020

The schnitzel was very nice but i found the potato salad dressing a bit too sweet. I’d try next time halving the icing sugar and the cider vinegar (as the sugar is obviously helping to counteract the acidity of the vinegar) to see if that helps as otherwise it was a really nice salad and the idea of glazing the potatoes in the stock works well.

  • Flamenco eggs with tomato & serrano ham (Huevos a la flamenca)

    • murphyfrank on July 27, 2017

I made this for dinner last night (for two people not 4). It was absolutely delicious. I cooked this on the stove top & the yolks were nice & runny. I did add some crumbed fetta before serving.
