Notes about Recipes in this book

  • Baked scalloped potatoes with feta cheese and olives

    • Avocet on March 15, 2021

This was a resounding failure, unfortunately. Even with cutting the amount of feta and olives, was overly salty and the flavors just didn't hang together well.

  • Caribbean peanut chicken

    • JayHarley on November 23, 2020

Slow cooked in cast iron casserole in oven. Used skinless boneless chicken thighs and served rice separately rather than in one pot. Delicious and very easy to cook. The spice is gentle and warm with peanut flavours dominant. Curry flavour almost indiscernible. Perfect for P who dislikes anything spicy (or curry at all) particularly on a week night. No looking after and held warm well (rice in rice cooker). Fun afternoon was had - not slaving over stove - and time for a long walk with dogs before home to a warming supper. Variations - omitted the parsley (none to hand), jalapenos from a jar in place of chilies, a splash of white wine vinegar replaced lemon juice in the marinade, and walnut v groundnut oil. Used cherry tomatoes but didn't skin or deseed (life's too short) - just fine and not at all marred by skins or seeds. Sauce a bit oily from peanut butter - so would go light when marinading and sauteing onions next time - but excess easily spooned from top.
