Notes about Recipes in this book

  • Sun-blushed tomato and basil tapenade

    • embk27 on August 08, 2020

For such a simple recipe, this was delicious. I could have eaten the whole thing to myself!

  • Spicy Mexican samosas

    • Ro_ on November 17, 2019

These were nice, but there was a bit too much pastry compared to the amount of filling. I wonder if it would be possible to use just one sheet of filo per samosa instead of two as Mary directs. I'd also try to get some bigger flavours into the filling to get it to come through more: more of all the spices, and more coriander. But I liked this recipe overall, and it's nice to get younger family members rolling up the samosas since it's a fun and fairly easy job.

  • Mushroom bruschetta

    • Ro_ on April 26, 2020

These were absolutely delicious. Creamy and moreish, they went down really well. I made them quite small and served as finger food, but with a bit of side salad a bigger portion would make a lovely starter at a dinner party.

  • Two-sided herbed smoked salmon and horseradish pâté

    • Ro_ on December 26, 2020

This is a great starter to prepare for a dinner party (or in our case: Christmas dinner) because you can prep it all the day before, then just finish it off at the last minute. I'd recommend doing the freeze/slice bit about 1 hour before you want to serve, to give you a clean cut but with time for the salmon to come back to a "lightly chilled" vs "super chilled" temperature.

  • Beef and ale stew with horseradish spiral dumplings

    • Ro_ on October 11, 2020

Had to make a few substitutions due to things I can't get here in France: I used grated butter instead of suet, Guinness instead of ale and some brown sugar instead of onion marmalade. I really enjoyed the dumplings: it took me some work (and extra flour) to get the dough to a rolling consistency, but they turned out well in the end. The flavour of the stew was very good, my only regret is that I think I added a little too much brown sugar so it was a bit too sweet: I think next time I'd just add a tiny sprinkling of brown sugar, and maybe also a tiny dash of balsamic vinegar (assuming again that I couldn't get hold of onion marmalade/chutney). The sauce was glossy and beautiful, and the beef was falling apart.

  • Ragù Bolognese with pappardelle

    • Mabel1 on September 12, 2020

Lovely sauce cooked in the oven.

  • Rack of lamb with salsa verde

    • Ro_ on August 27, 2022

I made this with "gigot" lamb chops, marinated them in the same way as advised for the rack, and did the salsa verde. It was delicious! Made for a little dinner with friends, and everyone loved the salsa verde. Will make again. Doesn't need as much oil as the recipe suggests though.

  • Roast leg of lamb with a garlic and thyme rub

    • Ro_ on February 27, 2023

Fairly standard roast lamb recipe, but the gravy gets a special mention because it was really delicious (probably helped that I used a good stock).

  • Venison cottage pie

    • Mabel1 on September 12, 2020

      Delicious.

  • Chicken breasts with red pepper and goat’s cheese

    • Ro_ on November 16, 2021

Didn't think these were that great, I'd have preferred the toppings to be actually stuffed into the breast. As it was they got a bit lost I found.

  • Chicken Valencia

    • Ro_ on May 08, 2021

I made a few substitutions, notably I used boneless thighs, and half a can of tomatoes + two tomatoes + some tomato soup (in the interest of using up leftovers). This was a fairly standard tomato-based chicken stew recipe: nice but not that memorable.

  • Five spice salmon stir-fry

    • Ro_ on April 27, 2021

Nice but not amazing. The flavours were a bit undefined and generic. Not sure this is something I'd choose to do again with a nice piece of salmon.

  • Golden fried crab and basil spaghetti

    • Sophph on July 27, 2022

I tried to economise by using tinned crab. Total fail as the result was tasteless, but I'm sure this would have been lovely if I'd bought fresh crab.

  • Fresh and sun-dried tomato pasta with mozzarella and basil

    • Ro_ on February 14, 2023

I had sundried tomatoes and mozzarella to use up so tried this recipe. Annoyingly I couldn't get fresh basil so had to use frozen, which is probably why the dish lacked a zing for me and wasn't really elevated.

  • Squash and black bean chilli

    • Ro_ on March 19, 2020

Made this with leftover steamed squash from a previous recipe, and kidney beans. For a vegan chilli recipe it was decent enough, but I'd only make it again in the future to use up leftovers. It was improved with some grated cheese and sour cream.

  • Orzo with broad beans, peas, lemon and thyme

    • Ro_ on December 19, 2020

I used edamame beans instead of broad beans. I also belatedly realised that I was out of lemons, so had to omit the zest, and use bottled lemon juice. This was a shame as I think the zest would have finished this dish off perfectly. I had some chicken stock to use up, so I cooked the orzo in that and I must admit I was lazy and cooked the peas and beans in the same pan with the orzo rather than using a separate pan as suggested - this turned out absolutely fine. Overall this was a nice, fresh dish that I would make again.

  • Green beans and mangetout with mint caper butter

    • Ro_ on February 08, 2021

Absolutely loved this. The textures were delicious, with the crisp mangetout and soft broad beans, and I really enjoyed the flavours of the mint and caper in the butter. Simple but delicious, I'd definitely make this again.

  • Potato salad with celery and apple

    • Ro_ on July 04, 2021

I was a bit apprehensive about this, but it was delicious! I omitted the celery because my partner hates it, but personally I think it would have been even nicer with. The crunchy sweet apple really brought the potato salad to the next level. The leftovers were good the next day, the apple hadn't gone mushy as I'd feared.

  • Herbed quinoa and bulgar wheat salad with lemon and pomegranate

    • Ro_ on May 07, 2020

I really like the combination of ingredients in this salad, and the fact that it can be prepped all in advance would be handy for a BBQ party or similar. The only aspect I wasn't totally 100% sure about was the dressing. I have never used pomegranate molasses before: I had to make my own by boiling down pomegranate juice and I found the taste a little overwhelming. However it's true that once it was tossed through the salad it was less strong. I think next time I'd try it with a bought molasses (since I'm not sure I made mine correctly) or else maybe with a honey/mustard dressing.

  • Warm bulgar wheat and quinoa broccoli salad

    • Ro_ on May 11, 2021

I couldn't get fennel so had to just throw in some fennel seeds instead. Maybe that's why I found this pretty bland. Won't repeat.

  • White chocolate and raspberry cheesecake

    • Ro_ on October 12, 2019

Absolutely delicious. I rarely make desserts but this is one to repeat. Whole family loved it.
