  • Roasted potato and poblano tacos

      This isn't much of a recipe (more of a template)...simply roasting potatoes and poblano peppers and adding to a tortilla with the toppings of your choice. The outcome really depends on the toppings you decide to use. I added cilantro, roasted corn, cotija cheese, lime crema, and some seasoned tomatoes/salsa. They turned out well.

      Very spicy...inedibly so. I weighed the ingredients to ensure I had the correct amount, so I know I didn't use too much jalapeño. It's possible that I got a batch of incredibly spicy jalapeños, but this recipe is not a repeat for me.

  • Hoisin eggplant, spicy Brussels sprouts, and tofu

      The ease of making a sheet pan dinner was somewhat eliminated by having to make two different sauces and use two different sheet pans for the eggplant and Brussels sprout/tofu combination. This tasted great despite creating an annoying amount of dishes for a "simple" dinner.
