This is as close as one can get to a grandmother teaching you to make squeaky cheese. The quality of the product depends upon the quality of the milk and cream you use to make the cheese. I've settled on an unhomogenized, slow pasteurized jersey cow milk. I managed to track down cloudberry jam to serve with it. I used the microwave to warm the cheese for breakfast - Grandma would have used her coffee.

Publishers Text

This is a delightful little guide to making the traditional Finnish delicacy, leipajuusto, Squeaky Cheese. It is combined with just a touch of family history that shows how this particular tradition has been preserved in the United States. Those who are familiar with Finnish Squeaky Cheese understand that it is much more than just a cheese; it is also a connection to their past. The step-by-step process is accompanied by photos, and it will be easy for even the first-time attempt at making Squeaky Cheese. For those who remember their grandmothers or mothers making it, this book is sure to bring a touch of nostalgia as it carries the reader down Memory Lane.
