    For health reasons I’ve been working for a long time to reduce sodium but find many low sodium recipes pretty boring. I decided to give this cookbook a try and tonight made the cod with tomato-thyme salsa. We really liked the salsa but thought it seemed disconnected to the cod. I think putting the two in parchment would help meld the flavors of the fish and herb tomato mixture together better. I baked the zucchini alongside the cod as directed, and just plain, it was pretty ho-hum. There are tastier ways to avoid sodium than this. Probably won’t repeat.
