Lots of fun and crowd pleasing recipes on using seafood and fish. Would be interested in seeing more of Chef Sernaglia’s recipes.

Notes about Recipes in this book

  • Pimiento cheese

    • hirsheys on December 18, 2019

This is a sub-recipe for the pimiento cheese hushpuppies, but it also notes that it is great served alone and I've been looking for a good pimiento cheese recipe! This one is very easy - just stir together some shredded sharp cheddar, an equal amount of finely chopped pimientos, some finely chopped pickled jalapenos, a little salt and cayenne, and some mayo to bind it all. At first, I found the mixture a bit loose for my taste, so I added a bit more shredded cheese - next time I'd probably just decrease the amount of mayo a bit. Next time I might also make this in the food processor, too, to get a smoother texture. That said, the flavor is great! The pickled jalapenos add a lot.

  • Baby back ribs with guava barbecue sauce

    • julesamomof2 on June 17, 2020

Nice recipe, and the guava bbq was interesting although tasted like regular bbq to me. The guava paste took a very long time to melt and the instructions don't state that. It easily took close to 20 minutes of simmering before the paste melted and by that time it was pretty thick but the ribs turned out great regardless.

  • Warm Asiago crab dip

    • julesamomof2 on February 14, 2023

Very good, traditional recipe for warm crab dip. Halved the recipe and it was more then enough for a Super Bowl spread. I would make this again.

  • Frozen mango cheesecake

    • julesamomof2 on February 07, 2023

Test drove this for super bowl weekend to see if we liked it enough to serve to friends and it was delicious! Light, fruity, not too sweet, and icy cold. Will repeat for the big game.

  • Chicken tinga

    • MmeFleiss on September 30, 2019

Delicious. I wanted to use up leftover roast chicken so I just simmered the sauce for about an hour before mixing in my shredded chicken.

    • alex9179 on May 31, 2019

Nice depth of flavor. I started early and let it cook a bit longer than directed on a very low simmer. A favorite with the kids.

    • Apepin on August 03, 2021

Great flavor and super easy. We used it for tacos. Next time I'll make it with rice and beans. The sauce was delicious.

  • Chicken enchiladas with salsa verde and smoked ancho and pasilla sauce

    • NJChicaa on July 07, 2018

These are delicious. You also need to make the chicken tinga, the pasilla sauce, and the salsa verde before you can start to even get going on this recipe. Do it over the course of like 2 days. It took me 6 hours from start to finish.

  • JWB crab and quinoa cakes with curry kale slaw

    • NJChicaa on May 20, 2023

The cakes broke apart in the pan. Even just eating it as a pile it wasn't particularly tasty. Will not make again.

  • Crispy Sicilian-style pounded tuna steaks

    • NJChicaa on July 07, 2018

      Surprising and delicious.

  • South Florida eggs Benedict

    • NJChicaa on May 20, 2023

      absolutely delicious

  • Huevos rancheros

    • NJChicaa on May 20, 2023

This recipe is a lot of work but it definitely yields a tasty breakfast.

  • Baked boatmeal squares with blueberries and coconut

    • NJChicaa on May 20, 2023

I really expected to like these but I absolutely did not. I threw the whole batch out after tasting one.

  • Veal saltimbocca pockets

    • NJChicaa on July 07, 2018

Outstanding. Definitely don't skip the marinade.

  • Grilled skirt steaks with Carlo's chimichurri

    • NJChicaa on July 07, 2018

I found the amount of red pepper flakes in this to be overwhelming and I don't mind heat. Next time I would use half of what is called for.

  • Buttermilk blue cheese dressing

    • NJChicaa on May 20, 2023

This is a delicious dressing and simple to make.

  • Andalusian gazpacho

    • NJChicaa on May 20, 2023

Easy and delicious. I make this a couple of times each summer.

  • Black-and-blue burgers

    • NJChicaa on May 20, 2023

      Best burger I've ever made.

  • Margaritaville family recipe Cuban meat loaf

  • Fajita black beans

    • alex9179 on May 31, 2019

Good variation for jazzing up canned beans. Watch the salt, depending on the brand.

  • Calypso sauce

    • hbakke on December 31, 2022

Tasty dipping sauce. The coconut rum addition sounded interesting, and the resulting sauce had a nicely tropical vibe. The coconut rum melded into the sauce without any overwhelming coconut flavor. I would make this again.

  • Slow cooker pork shoulder with LandShark and cola

    • Elkihl on September 07, 2023

Pretty bland. Would not make again
