    Sweet and sharp shallot sauce (pg 30) It is worth tracking down the Filipino white cane vinegar (sukang maasim) for this recipe. This dipping sauce is very simple -- shallots, brown sugar, soy sauce, and vinegar. However simple, it is an excellent dipping sauce for many spring rolls.

    Filipino salad crepes (Lumpiang sariwa) (pg. 60) - think a traditional crepe in which the liquid is a mix of coconut milk and a light lager beer. Add a cole slaw with fish sauce, lime juice, and peanut butter dressing. Stop here for a satisfying snack. Or add a fried egg for an entree. I loved the snack, was unimpressed with the entree.
