Notes about Recipes in this book

  • Stumptown coffee and Burnside bourbon

    • bwhip on August 12, 2020

Really delicious ice cream. Interesting ingredients and techniques - no egg yolks or cornstarch? End result was super creamy and smooth, not too sweet, with great coffee flavor with some additional depth from the bourbon. Lovely, and I particularly enjoyed it with some brownies sprinkled over the top. Looking forward to trying other recipes from this creative cookbook.

  • Cinnamon snickerdoodle

    • Ecngreg5 on August 04, 2020

This was fantastic! Next time, however, I would rather just make the cookies on the side and let people crumble them in themselves or eat them separately.

  • Roasted strawberry & toasted white chocolate

    • lsmedley on May 25, 2022

This ice cream was incredible. Was a little concerned when the white chocolate became a bit dry during toasting (expected it to melt into a liquid and it didn't), but it came together once you mixed it with the cream! Probably one of my favorite ice cream recipes we have made.

Publishers Text

Salt & Straw, perhaps the country's most innovative, exciting, and mediagenic ice cream shop, shares the technical and conceptual tools to teach readers how to make deliciously creative ice cream at home.

Boasting cultish followings in LA, San Francisco, and their hometown of Portland, Oregon, Salt & Straw is the brainchild of two cousins, Tyler and Kim Malek, who stumbled into ice cream making. But that stumbling is what makes for their innovation: they quickly turned to friends from all over Portland's culinary scene for advice, making for an ethos of constant collaboration and creativity to create hundreds of flavors from one, simple ice cream base that a home cook can make in minutes. In The Salt & Straw Ice Cream Cookbook, they share 80 of their favorite recipes, from flavors like Chocolate PB&J, or Apples and Doughnuts, to wilder creations like Honey-Bourbon Corn Pudding and Salted Turkey Caramel (it's for Thanksgiving). But beyond the recipes themselves, they teach readers the lessons they've learned from all those chocolate makers, salt experts, and chefs, and their many creative tools to inspire the home cook's ice cream imagination.
