  • Baked apple mascarpone fool

      I liked that this dessert requires very little effort, just a few ingredients and can be made ahead. However, my baked apples were a little on the hard side, so I think this would have been much better with the optional caramelized apples on top. Used Amaretto instead of Marsala wine for the cream, since this is what I had on hand.

      Halfway through the recipe late at night I discovered the sugar was finished, so I left it in the pan infusing another night. Turned out delicious and a very beautiful pink orange hue. Half the recipe was enough to fill three jam pots.

      Delicious! Used a 1 kg piece of lamb shoulder. When core temperature was over 53 degrees Celsius, 30 minutes earlier than in the recipe, the meat was tender and very tasteful.
