  • 21st-Century Coronation chicken

      Very tasty and easy, unlike some Coronation Chicken recipes. I didn't have grapes so added cherry tomatoes but grapes would be good. Added an avocado and served on a bed of little gem lettuce. Due to egg, dairy and mustard intolerances, I used dairy free Greek yogurt and dairy free double cream in equal quantities. Worked really well and no one realised it wasn't mayo in the sauce. Will definitely repeat for Platinum Jubilee weekend as this recipe was originally developed for The Queen's Coronation.

  • Duck breasts with a piquant lime and ginger sauce

      Lime and ginger sauce was a nice change from the usual orange. I simplified the method by putting all the sauce ingredients in a saucepan and bringing to the boil. I cooked the duck on the hob rather than use the oven. Served with steamed new potatoes and tenderstem broccoli. Would be a good dish for entertaining.
