      First try from this book and it was a hit for meatless Monday. I used a whole butternut squash but it would be super easy with pre cut squash. The carnivores in my family couldn't believe it was meatless!

      Absolutely fantastic! Will definitely make this again and again. My potatoes needed more yogurt. Also, I added a tablespoon or so of butter because I only had fat free yogurt. Would have added some milk but was out.
