Notes about this book

  • LR.eatingright on September 13, 2021

I’m looking forward to having this sheet pan cookbook. So many things I want to make. The Frozen Yogurt Bark will be perfect at my next dinner party, broken into shards for standing up in ice cream or something like that. Bonus, every recipe has a photo!

Notes about Recipes in this book

  • Chicken wings and cauliflower with honey-mustard sauce

    • Zosia on February 26, 2022

The nicely balanced sauce (not too sweet, not too mustardy) was a delicious complement to both the roasted chicken and cauliflower and the timing worked well with chicken legs (split into drumsticks and thighs).

  • Fish and chips

    • Zosia on December 18, 2021

The doctored mayonnaise was a great way to flavour the fish and keep it moist especially as I put it under the broiler at the end as suggested to crisp everything.

  • Parmesan-crusted pork chops

    • Zosia on March 02, 2022

The flavours were good - though I would have preferred the sauce without the honey for the potatoes - and the timing worked well but the crust was disappointingly soggy.

  • Hoisin pork tenderloin

    • Zosia on December 18, 2021

My tenderloins were about 500g each, larger than what the recipe calls for, so I roasted them with the vegetables from the start. I didn't marinate them first and I don't know that it would have made a difference if I had since everything, vegetables included, were flavoured by the marinade/sauce. I recommend lining the sheet pan with foil or parchment to help with cleanup as the marinade did burn in spots before the food was cooked. Great flavours that everyone enjoyed.

  • Shrimp tacos

    • Zosia on December 18, 2021

Not particularly revolutionary but it was quick to put together and very tasty. The lemon brightened the flavours and balanced the sweetness of some of the ingredients.

    • stef on April 11, 2022

This was quick to make and family enjoyed it. The sauce went well with the shrimps. A repeat

  • Crispy ham and cheese wrap

    • Zosia on January 07, 2022

Like a ginormous sheet pan-sized quesadilla - crispy, cheesey and delicious! I removed the cast iron pan weight and the top sheet pan at the 20 minute mark as the top wasn't crisping or browning well and that did the trick. I stayed close to the original recipe but this would be great with a variety of fillings.

  • Blueberry pancake

    • Zosia on March 02, 2022

These were great. They were light and fluffy, perhaps a little drier and more cake-like than most of the pancakes I make stovetop, but with syrup, this wasn't an issue at all. Very quick easy prep (I'm tempted to skip the mixer and whisk by hand next time) and hands-free cooking. They will be repeated.

  • French toast

    • Zosia on December 18, 2021

In my oven, at the suggested temperature, the toast took so long to brown, the edges were completely dried out and unpleasantly hard. I made it again at 400F with excellent results. The brown sugar-vanilla flavouring was very good both times.

  • Teriyaki salmon fillet

    • Zosia on December 18, 2021

The sauce had good flavour and a very nice consistency but burned quickly. For this reason, I recommend lining the baking sheet for easier clean up. I used foil as I hoped the salmon skin would stick to it so the flesh could be lifted away from it; it worked. I roasted the cabbage separately. Everyone enjoyed it.

  • Roasted mushrooms and asparagus with chive cream

    • Zosia on June 16, 2022

We really enjoyed the flavours of this dish but I'll have to make some adjustments to the timing next time: turn the mushrooms after 15 minutes so they don't dry out and add the shallots at the same time, about 5 minutes before the asparagus etc is added so they soften a little more.

  • Butterflied barbecue chicken with corn

    • Zosia on December 18, 2021

I usually roast butterflied chicken at a higher temperature for less time but these instructions worked very well. The chicken was juicy and delicious and the corn was very tasty as well. Family is already requesting a repeat.

  • Beef and lamb meatballs

    • stef on March 16, 2022

Nice quick way of making meatballs. I used all beef and they were tender.

  • Pineapple chicken

    • stef on August 25, 2022

This was a real winner. The marinate with ginger for chicken thighs was great and added pineapple ws a nice touch. Served with my soya walnut rice. Recipe was increased to make dinner for 10 and everyone loved it including children.

  • Shawarma-style tofu with Mediterranean salad

    • hbakke on July 05, 2022

My tofu crumbled significantly more than what is shown in the book photo, but still tasted good. I only used one package of tofu and increased the amount of cucumber and bell pepper in the salad. The accompanying salad was good, but was better with a bit more sumac sprinkled on top. I do think the hummus was essential as it adds a welcome creamy component to the dish. I would make this again.

  • Glazed tofu, edamame and vermicelli bowl

    • hbakke on June 08, 2022

Tasty, simple sheet pan recipe with a flavorful sauce/marinade. I would make this again.
