    Yes, this book is a bit of a disappointment because nearly every recipes requires that I have fermented 2-3 ingredients in advance. Plum cherry (pg 99) was chosen because it gave me the choice of fresh or fermented plums and cherries. Add tarragon, seltzer and ice and I had my first ever gazoz. Yes, there are several other recipes that I can actually get the ingredients for and yes, I'll do some ferments to get a sense of the more common gazoz flavors, but I suspect that this recipe (and book) will be more inspiration for experimentation with what is actually available in my part of the world.
