  • Blueberry sour cream bars

      These are excellent and as promised quick and easy to make. I streamlined the recipe even further and used the crust/streusel recipe from the Raspberry Cheesecake Streusel Bars in Edd Kimber‘s other book One Tin Bakes, which has you melt the butter and stirring everything together with a fork instead of dirtying the food processor. Will be making these many more times this summer.

  • Sesame milk chocolate shortbread

      Used regular butter and dark chocolate and did not cut the dough before baking. I made only half a recipe and pressed the dough into a parchment paper lined 8x8 tin, froze it for 10 minutes before baking and cut it right after baking while still soft. The cookies crisped up perfectly afterwards. I also tempered the chocolate before dipping the cookies into it but realize of course that tempering is not something you would have your audience do in a cookbook which has the word Easy in the title.

  • Grapefruit poppy seed snack cake

      I made this earlier today and was really looking forward to a slightly different citrus twist. I really enjoyed the combination of ground almond and polenta and thought the texture of the cake was lovely. I didn’t garnish the cake with more grapefruit as hoped that the grapefruit zest in the cake and the juice in the glaze would be enough. This was a mistake, though, as I could not detect any grapefruit at all. I’m a bit disappointed by that because a lemon poppy seed cake does not need to be served with lemon for the flavour to come through. The grapefruit I used tastes lovely on its own but this as not carried through in the cake itself. Not sure I’d make this one again.

  • Chocolate dipped honeycomb

      I was really scared to make this but it turned out great! I didn’t dip in chocolate because it was good on its own. Sort of tastes like toasted marshmallow. Be sure that your baking soda and cream of tartar is sifted before mixing in. There were a few small lumps in my finished product.
