    I just made "Sicilian Favorites" page 101. Since I didn't have any celery, I took the measly looking carrots that I had chopped them into dice and added them. I left out the garlic and made the rest as written. It is so wonderful, a blend of some many flavors and textures. I really love it. I will make this as many times as I can this summer while the eggplants are local and fresh!
