Notes about Recipes in this book

  • Liz's carrot marmalade

    • EmilyR on June 30, 2022

The spices in this make it a bit reminiscent of a pumpkin spice of sorts. I made a 1.5 batch to use the entire bottle of carrot juice and reduced the sugar by 2/3c. It still set up, was sweet enough, and had a caramel-ish texture.

  • Grand slam McMuffin

    • EmilyR on June 30, 2022

I made my sausages significantly smaller as there was no way I'd be able to eat 1/4 Lb of it in a sandwich. I cut it according to the size of the sausage roll. Needed a bit of salt and pepper at the end to season it up, but a good little filling and calorie laden brunchy sandwich.

  • The cabbage patch

    • EmilyR on July 15, 2022

Makes me wish I had paid a visit to Uncle Boon's ... this is a great little Summer salad that feels light and somewhat healthy, but packs a punch with flavor.

  • Coconut-chile dressing

    • EmilyR on July 15, 2022

I had to add a touch more salt, but this is a very drinkable dressing that pairs perfectly with the other salad flavors.

  • Gas-station tostadas

    • EmilyR on July 09, 2022

Definitely make your best attempt at Collen's onion dip for this (that's going to take the most prep time). Also, you can curl your onions in some ice water from extra je nais se quois... but really, just make the Boomtown upgrade. I now want to Boomtown upgrade my entire life.

  • Double-decker boomtown upgrade

    • EmilyR on July 09, 2022

The name alone was reason to make this power up. I made the best try at Colleen's onion dip for this and the gas station bean dip. You might not feel like it's a high point of your life eating this, but I don't regret it.

  • Dorito dust

    • EmilyR on July 08, 2022

Exactly like you expected... needed for the Tostadas and Boomtown upgrade.

  • The Bellair, the reason we make sandwiches

    • EmilyR on July 07, 2022

The cranberry sauce instantly reminds me of Thanksgiving, but this is a great little sandwich with a lot of layers of flavor.

  • Colleen's bagel bites

    • EmilyR on July 07, 2022

Everyone loved this... so simple, but such an easy quick meal. I also love how versatile it is to amend or modify for people's preferences.

  • Don't sleep on the carrot yogurt

    • EmilyR on July 01, 2022

I did all of the things and it's a great and decadent little breakfast/brunch yogurt that feels very Venice Beach. The one thing you absolutely cannot skip out on is the granola. Also, I used vanilla skyr, because that's my daily protein boost.

  • Nini's granola

    • EmilyR on June 28, 2022

I've made quite a few granolas and this is one of the best. It takes a while to make and the currants aren't super easy to find, but it's worth it and the oven does most of the work. I used slivered almonds and pistachios for the nuts.

    • sanfrannative on November 03, 2022

The salted mixed nuts in this recipe are THE BOMB. If you love granola you will love this recipe!!

  • Beet butter and tahini on ice cream

    • EmilyR on July 07, 2022

This feels like an elevated dessert of sorts. The flavors all meld and copious amounts of sea salt make this a nice and unexpected treat.

  • Magic shell and potato stix on ice cream

    • EmilyR on July 07, 2022

Simple, yet effective for salty and crunchy ice cream additions. I've made magic shell before and the kids always enjoy it a lot.

  • Crunk chunks on ice cream

    • EmilyR on July 08, 2022

I would have appreciated a little guidance on how big the loaf pan was supposed to be and some weight measurements, but the author clearly states he's not a baker. My graham cracker sand mix filled 2 loaf pans, but the topping felt a bit scant. I think next time I'd double the topping or reduce the graham cracker. I now want to try creole cream cheese and will add that to my list of ice creams to create.

  • Candied peanuts, Nutter Butters, and toasted coconut on ice cream

    • EmilyR on July 06, 2022

I added a fair amount of sea salt and it was delightful. I'd also recommend sourcing out the Nutter Butter wafers, which are a bit like a cake cone filled with more peanut butter, because that is the point anyway.

  • Cheez-Its and peanuts on ice cream

    • EmilyR on July 04, 2022

The crunchy and salty bits definitely make this accessible and better than average. I love the Cheez-it gripz which are like little salty and crunchy sprinkles.

  • Bellair-style herb mayo

    • EmilyR on July 07, 2022

Comes together quickly... I put slightly less dill as we have someone who isn't keen on it, but it's a great sandwich spread.

  • Peanut butter salsa macha

    • EmilyR on July 06, 2022

The recipe he references in the book from Tu Casa Mi Casa can be found here : https://www.wanderlust.co.uk/content/peanut-salsa-recipe/

  • Pizza cream cheese

    • EmilyR on July 07, 2022

This is an easy condiment to have on hand and makes sprucing things up super easy and simple.

  • Big zesty buttermilk dressing

    • EmilyR on July 16, 2022

Just what the title says... a zesty take on buttermilk, though it's just a scant amount of buttermilk. I also used labneh in lieu of sour cream.

  • Gas-station bean dip

    • EmilyR on July 09, 2022

Quick and simple way to upgrade a can of beans.

  • My best try at Colleen's onion dip

    • EmilyR on July 09, 2022

I will just say this much... if you are going to the work of caramelizing onions at least throw a couple more in the pan and either double it or use them for some other recipe. Colleen's bean dip is indeed a good upgrade and excellent with the tostadas.

  • Shrettuce

    • EmilyR on July 09, 2022

Guessing most people have already had this, but the recipe description is great.

  • Nate's spicy chicken spices

    • EmilyR on June 24, 2022

Great flavor with heat and smokiness.

  • Chicken salt

    • EmilyR on June 22, 2022

It's worth getting to an Asian grocery for those MSG laden chicken granules. This is a nice little flavor booster.

  • Mom's famous burnt tomatoes

    • EmilyR on July 16, 2022

I am not super comfortable frying food for a variety of reasons, but I wanted to try these and decided to invest a chunk of my day in making it happen. I learned a couple tricks along the way - obviously make sure your oil is hot - very hot. I would have liked a temp reading to know what to aim for initially, but the learning curve paid off. Set a timer, because 3 minutes on each side is necessary. I used a spider net to get them out and then drained them again before adding them to the stacks. The result is a sumptuous little pile of umami sweet and salty tomatoes that are reminiscent of sundried tomatoes, but with something a bit more special. I still think there has to be a way to short cut things and just bake it all up in the oven, but that might be a later foray. (photo before baking)

  • The collard melt

    • amandaeats on October 09, 2022

oh this was excellent; I used store bought Russian dressing just out of convenience, but the slaw and collards were amazing

  • Scotty's good-with-everything collard greens

    • amandaeats on October 09, 2022

I will be making these collard greens for years to come.

  • Spicy chicken thigh roaster sandwich

    • lsmedley on July 20, 2022

This sandwich was delicious! Would maybe reduce the amount of the Spicy Chicken Spices a bit (was a little too salty) and maybe cook them on a wire rack on the baking sheet so they don't get soggy on the bottom, but was still absolutely amazing!

Publishers Text

A fun and flavorful book of 95 dynamic recipes that put a playful spin on Southern food, from the James Beard Award-nominated owner of Turkey and the Wolf in New Orleans.

Mason Hereford grew up in rural Virginia, where he frequented local country stores that sold everything from gas and ammo to broccoli-cheese casserole and a turkey, cheddar, and cranberry sandwich that still haunts his dreams. After working in fine dining, he opened Turkey and the Wolf in New Orleans in 2016, bringing country store spirit (and his take on that turkey sandwich) to the masses.

In Turkey and the Wolf, Hereford draws on inspiration from his childhood to offer bold, fresh twists on some of the most beloved Southern dishes. From chicken pot-hand-pies with buttermilk dip and decadent bologna sandwiches to deviled egg tostadas with salsa macha and his mom's burnt tomato casserole, this colorful cookbook is packed with nostalgic and indulgent recipes, mouthwatering photographs, and delectable illustrations.

With a focus on big flavors through laidback cooking, Turkey and the Wolf is a frolic through Southern food from the viewpoint of a true original.
