  • Italian pear and pine nut ring cake

      I didn't bother with the pine nut coating on the tin, just liberally coated my 12 cup bundt pan with Baker's Joy. Since the pan was dark, I baked the cake at 325 F, so it took a little longer to bake. As with most whipped cream cakes, the texture was light and moist. We loved the combination of pear, chocolate, and pine nuts.

      I made 3 servings from the whole recipe and we didn't find them too large (we are dessert lovers). The custards needed 5 extra minutes to cook. They turned out perfectly smooth and silky. The maple sauce had great flavor, and even though a layer stuck to the ramekins, there was still plenty of sauce. The custard itself did not really taste of maple, which I thought was fine, but my son found lacking. I topped the cremes with candied pecans I had on hand instead of the ones from the book; they were a nice touch.

      Delicious crumbly biscuits. And extra cheese is never going to be a bad thing.
