      Quick, easy and tasty ... although I'm absolutely rubbish at frying eggs, should have poached them as normal!

      Added a bit of fresh tarragon and dijon mustard to the mix. Used cheddar because I had exactly the right amount open and ready to use up. Nice, but at that temperature (140ºC fan) it took me much longer (about 10 mins more) to set.. But factoring in the extra cooking time, a nice spring quiche.

      Simple and easy alternative to a croque monsieur. I toasted the sandwich in a pan before popping it under a grill. Subbed in sour cream for the creme fraiche as that was what I had, and topped with a fried egg to make it a croque madame.
