    Cold tongue (pg 78) - in college I was a live in babysitter for five children whose Grandmother loved tongue ... a fondness that has passed down through the generations while food culture has moved away from it. So this was the obvious dish to have available for a visit. I added juniper berries which are not mentioned in the recipe. We were all pleased with the results -- I think Grandmother G. would approve as well.
