Notes about Recipes in this book

  • Turkey and black bean tamale pie

    • TrishaCP on November 29, 2021

I’m not sure what happened, but the cornbread topping was overly moist and didn’t firm up. (It has of course firmed up overnight in the fridge, but is still pretty soft.) We ended up having to serve it over dryish cornbread muffins it was so runny! Other than that execution issue, this had really good flavor, and the punch of heat was very welcome after non-spicy Thanksgiving foods.

  • Candied yam and marshmallow casserole 101

    • babyfork on December 01, 2024

TDay 2024 - these are so easy, it's barely cooking. The recipe says two 40 oz cans, but mine were 29 oz cans and it was a perfect amount for our group of 12 adults/teens and 4 kids. I drained and mashed them slightly and sprinkled salt and cinnamon on top (not in the recipe) before sprinkling on the brown sugar. I only used about a 1/8 cup. Baked for 45 minutes and then brought to the host's house, topped with the marshmallows and baked at 350 for about 15 minutes to toast the marshmallows.
