Cold tongue (pg 78) - in college I was a live in babysitter for five children whose Grandmother loved tongue ... a fondness that has passed down through the generations while food culture has moved away from it. So this was the obvious dish to have available for a visit. I added juniper berries which are not mentioned in the recipe. We were all pleased with the results -- I think Grandmother G. would approve as well.

Publishers Text

This revised and expanded edition offers a celebration of the tradition of preparing and savouring meals in the open. It reveals a world of simply prepared and delicious foods and aims to stimulate the imagination with tales from far and near. It offers the conventional and the exotic: from the street food of the Middle East and Mediterranean, the festivals of the high plains of Mexico to the English traditions Glyndebourne and shooting-lunches on the moors.
