  • Baked onion soup

      This is really quite delicious! I did add some no-beef broth concentrate for a little more depth of flavor, & made sure the onions were caramelized well. Even my omnivore hubby thought it yummy. It's quite simple to make outside of slicing a mess of onions, but well worth all the slicing! very satisfying on a chilly autumn evening.

      Beautiful color, full flavor, great soup for fall. Added a bit of butternut squash that was on hand, some cream along with the milk, and pureed the soup completely to satisfy a picky family member. Will definitely prepare again!

  • Spaghetti squash stew with turnips and snow peas

      This is quite good, not super outstanding, but a nice use of spaghetti squash. The garnish of lightly sauteed turnips & snow peas is a must as it provides much needed textural contrast to the dish. This would probably work well with a sprinkling of feta cheese. I didn't have salt-free herb blend, so just threw in some extra herbs, including sage.

      June 2022: Excellent. Next time, maybe add more garlic. I made croutons from gluten free bread.

      Positive reviews by everyone at the table. Used 50/50 broth and water for the 3 cups. We garnished generously with olives, cheese, chips and black olives. One serving counted at 250 kcal.

      Easy soup made with staples. I used yellow split peas instead of mung beans. The hit of sweet ginger is nice.

      Very delicious bowl of soup--creamy and luscious, with underlying herbal notes. Very satisfying, and quite simple to put together.

  • Cream of lettuce soup

      This had a pleasant, subtle flavor, but I will definitely puree all of the soup next time. Having soggy shredded lettuce intact in the soup was not ideal.
