    Buckwheat crepes with quince filling (pg 110). I set aside my preference for a pure buckwheat galette and actually made the buckwheat crepes. They are actually quite good buckwheat crepes; they are not galettes. Either would make a good vessel for the simple cooked quince filling. This is an easy, elegant dessert worth repeating ... or considering for a midnight snack.
