Notes about Recipes in this book

  • Chicken pieces with vinegar sauce (Spezzatino di pollo all'aceto)

    • wester on April 26, 2016

I thought the flavor was good but the sauce was a bit thin; the children both thought it was too sweet (which is quite strange as the sweetest ingredient is vinegar).

  • Chicken with eggplant (Braniya)

    • wester on September 24, 2014

Simple and very tasty. Very good combination of flavors. Hubby absolutely loved it. The cooking time given was much to short though, and/or it should boil fiercely so the eggplant steams well.

  • Sautéed chicken with sorrel

    • twoyolks on April 25, 2020

The chicken cooks quickly and makes a very nice sauce with is really complemented by the lemon flavor of the sorrel.

  • Roast chicken, Moroccan-style (Djej mechoui)

    • RobertaMuir on December 15, 2012

I used oregano instead of coriander and a mixture of smoked, sweet and hot paprika to make this compound butter which I put under the skin of the chicken as well as over it - excellent!

  • Chicken with mutton

    • wodtke on October 01, 2014

Chicken with mutton? Now there's a combo you don't see every day.

    • wester on October 01, 2014

A nice stew, and forgiving of ingredient substitutions.

  • Braised squabs (Pigeon Bressane)

    • EdM on February 14, 2021

Good flavors, great with Pinot Noir. Earthy, gamey, flavors with gizzard-mushroom-brown rice stuffing. Trussing is the prep challenge, to keep stuffing inside during sear and braise. The rest is easy. Eating is messy, or would be 4.5 stars.

  • Braised duck with walnut and pomegranate sauce, Iranian-style (Fesenjan)

    • wester on October 09, 2015

Lovely. I made this with chicken at the suggestion of another recipe, and fried the chicken first, then the onions and walnuts. The sweet/sourness of the pomegranate, the bitter crunch of the walnuts, and the smooth background of the flavorful chicken made a nice complex taste profile. Me & hubby loved it, the children weren't so keen.
