      Perfect texture! And a variant: replace sugar with 1/4C. chai-spice sugar, reduce butter to 1/2C., add 2 tsp vanilla essence, add 2 bananas (1 1/2 diced into batter, 1/2 to slice for muffin tops).

  • Chocolate Amaretto bundt cake

      Made this cake as directed with an addition of 1 1/2 teaspoons of espresso powder to enhance the chocolate. This cake is moist and delicious. Even with 4 tablespoons of Armaretto and 3 teaspoons almond extract the almond flavor comes through very mild; expected more almond flavor. Perhaps the addition of the expresso powder diluted the almond flavor. Lightly sprinkled with powdered sugar and served. Very nice cake, good enough to serve company.

      I had to have this book, just for this recipe, after trying the cupcake at the bakery in NYC. I make these as cupcakes instead of a cake and it is often what I request for my birthday cake!

      We generally don't like American-style buttercreams, but this one we really enjoyed. I didn't have unsalted sticks of butter, but next time I will definitely use unsalted.

      I might have overbaked this a little, but it still tasted fine. I think I would check it sooner. I really enjoyed this pie, as the cream cheese filling cut the sweetness some.
