      p. 202 – This dish is absolutely wonderful. The book offers a lower fat, vegetarian version of a classic dish. On this occasion, since we were having guests, I decided to make the traditional variation of the dish. I caramelized the leeks in 2 tbsp of butter and instead of evaporated milk, I used 35% cream. The finished dish was sensational and the velvety sauce had our guests swooning! This is a dish that screams autumn and with market fresh baby pie pumpkins available, you just can’t go wrong. The sage is an essential ingredient as it really ties the dish together and adds a savoury element to an otherwise sweet sauce.   • Tofu with chilli peanut sauce

      My philosophy of not letting ‘not having all the ingredients for a recipe’ stopping you from giving it a go was yet another success tonight ! With slight tweaks to the veggie ingredients, stir frying these and serving them with the fried silken tofu (yes it worked!) on top of a bed of wide rice noodles mixed through with the chilli peanut sauce was relatively quick to prepare and a delight to the taste buds ! 4.5/5

      A good wintery side dish. I’d err on cutting the swedes half the thickness of the sweet potatoes as there was a difference in the cooking times & the swedes seemed too firm.

      Bland stodge. Would require major reworking to be even vaguely interesting.

      Meh. Everything 'worked' but nothing to get too excited about.

  • Lemon roasted onions and carrots

      VERY lemony, overpowering the other components. Could not detect the garlic or rosemary at all. Would reduce to one or even half a lemon.

  • Spiced pumpkin and coriander flans

      A very nice vegetarian tart, HOWEVER, there is a serious flaw with this recipe. Double the pastry as it is sufficient for only half the quantity specified.
