      Bought the book because the majority of recipes only use one egg which makes it easy to sub (flax egg). Recipe notes say you must follow the instructions as written. Good advice, as they turned out perfectly and did not "dome". Used Betty Crocker vanilla frosting which is quick and easy. Yields 12 small cupcakes, perfect!

      Second bake from this book and again, excellent. I like the formulaic recipe/method whatever the flavours. Flax egg works well. I was concerned as the mixture was very runny, so popped it in the fridge for 30 minutes before filling the paper cases. Baked perfectly in 25 minutes.

      I had high hopes for these as the cupcake recipes in the same book are excellent. However, I won't be making the muffins again. The banana and cinnamon was a great flavour combo so I will look for another recipe or else try as a cupcake. They were underbaked, although they had an extra 10 mins in the oven and they welded themselves to the paper cases!
