  • Braised eggplant 'briam' with saffron yoghurt

      I was going to make the other eggplant recipe on the previous page but chickened out, the illustration isn't very inviting although the recipe is intriguing. This one was OK, nothing sensational, but it did use up one if my home grown eggplants and some of my mountain of tomatoes. I didn't deep fry the eggplant in the interests of my waistline, roasted it instead, and that was fine.
