      These were so amazingly delicious! I made mini cupcakes and used canned caramel top n fill instead of dulce de leche. I slightly changed the icing and don’t remember exact quantities but simply used butter, icing sugar and the leftover caramel. Yum.

      Very good. The coffee didn't add the flavour of coffee but helped to balance the flavours. Needed one hour at 160C FF.

  • Blueberry crumble loaf

      Good cake, but nothing spectacular. The crumble topping came out a bit too dry, but I needed to keep the cake in the oven for the whole 60 minutes for it to be done. I am not sure I will make this again.

      I really like cakes that combine almonds with citrus fruits so I had to try this recipe. This cake couldn't be easier to make. It's amazing how well you can taste the orange just using its zest. I would suggest making this one day ahead as I thought it tasted even better when it was completely cool, especially after a day or two. I imagine this could be really good also using lemon instead of orange.

      This cake looks very fancy, but is actually very simple to make, and it tastes amazing. I had so many compliments when I took this one in to share at work. It does make an enormous quantity of icing, I had about a quarter left over, and I don't feel I skimped on the cake.

      Our second time of making these - delicious. Replaced cream of tartar/baking soda with baking powder to good effect. Don't forget dough needs to rest for 40 minutes before baking.

      Used dairy free marg and gluten free flour. Apart from the base being a bit crumbly (I won't use as much rice flour next time) it turned out to be fab. Thought it would be snack pieces but you could serve this as a dessert. Great if you end up with loads of bits of different nuts in your store cupboard. Use 'em up!
