Notes about Recipes in this book

  • Banana-brown butter waffles with dulce de leche

    • SpatulaCity on August 27, 2023

Nice! Used a Belgian waffle maker and the waffles turned out crisp and light. The waffles are rightly not too sweet, so the dulce de leche can do the heavy lifting there. Would be a nice special occasion or celebratory breakfast. Next time would add some orange zest or maybe toasted walnuts to add extra dimension

  • Walnut-chocolate chip banana bread

    • SpatulaCity on August 13, 2023

Really tasty! Just go into it knowing that the chocolate will dominate over the banana. Which for any chocolate lover is a good thing. I adore the sprinkling of walnuts on top of the cake - they became so crunchy and toasty! Elevated the cake for sure. Will do this again in the future.

  • Tomato tart with basil and ricotta

    • SpatulaCity on September 06, 2023

A nice and simple tart. I used frozen puff pastry dough and it worked well. I pulled it out of the oven when the edges were nice and golden, but should have double checked the bottom to confirm it was fully baked. Ours got a little soggy. Used a variety of tomatoes as shown in the picture and it had a really nice visual impact. Lovely for a simple summer dinner outdoors.

  • "Grittata" breakfast casserole

    • SpatulaCity on October 29, 2023

This casserole is perfectly pleasant, but for me not earth shattering. With the cream it was velvety and rich, and the flavors of Sun dried tomatoes and mushrooms worked well together. Subbed leeks for the green onion, and maybe that was too subtle? I would add extra seasoning and throw in some herbs next time. I can see basil working nicely here.

  • Pork and sage sausage patties

    • SpatulaCity on November 19, 2024

A classic breakfast sausage patty. I left the maple syrup out, to cut any sweetness They were still tasty! I either over-mixed or over-cooked the sausages as they were a little tough.

  • Corn and chile strata with Mexican chorizo

    • Kitiara121 on April 24, 2023

I halved this recipe for a breakfast brunch for 4 people. Overall the recipe was fantastic. I used canned hatch green chili's in lieu of the fresh poblano chili's and will not do that again. I think the fresh chili's would have better texture, size and bite and provide an overall better "chili" aspect to the recipe. Using only half pound of chorizo let us feeling short. Next time (for half a recipe) I will use at least 3/4 lb of the chorizo.

  • Ham and cheese quiche with crème fraîche and chives

    • Kinhawaii on January 06, 2021

Really like this quiche but with my ham- it’s quite salty. Made this before & this time just added a pinch of salt but I think for me it really needs less ham.
